Our Philosophy

Kōyō, is an oasis dedicated to traditional Japanese cuisine and kaiseki culture.

Harmony: In kaiseki cuisine, every element - from the selection of ingredients to the choice of porcelain to the presentation of the dish - contributes to the creation of a culinary masterpiece that pleases both the eye and the palate.

Seasonality: Each dish captures the essence of the season, bringing out its most authentic and genuine flavours.

Respect: IYO Kaiseki’s philosophy is based on valuing each ingredient and treating it with care and attention to preserve its freshness and original taste.

Dining at Kōyō is the first step toward a unique
and unforgettable experience that engages all the senses.

The Story

A Vision of Excellence

"My dream was to create a space where traditional Japanese cuisine could evolve while staying true to its roots."

- Chef Hiroshi Tanaka, Founder

Established in 2015, Kōyō began as Chef Tanaka's vision to bring authentic kaiseki cuisine to Madrid. After spending two decades perfecting his craft in Kyoto's most prestigious restaurants, Chef Tanaka embarked on a journey to create a dining experience that would honor his heritage while embracing innovation.

The restaurant's name, Kōyō (紅葉), meaning "autumn leaves," was chosen to represent the beauty of seasonal changes and the transformative nature of cuisine. What started as an intimate 12-seat counter has evolved into one of the city's most celebrated dining destinations, earning two Michelin stars and numerous accolades.

Today, Kōyō stands as a testament to Chef Tanaka's unwavering commitment to excellence, bringing together a team of passionate professionals who share his dedication to crafting unforgettable dining experiences.
