Established in 2015, Kōyō began as Chef Tanaka's vision to bring authentic kaiseki cuisine to Madrid. After spending two decades perfecting his craft in Kyoto's most prestigious restaurants, Chef Tanaka embarked on a journey to create a dining experience that would honor his heritage while embracing innovation.
The restaurant's name, Kōyō (紅葉), meaning "autumn leaves," was chosen to represent the beauty of seasonal changes and the transformative nature of cuisine. What started as an intimate 12-seat counter has evolved into one of the city's most celebrated dining destinations, earning two Michelin stars and numerous accolades.
